Ingredients:
- 4 slices of stale bread (preferably Italian bread)
- 4 large eggs
- 4 cups chicken or vegetable broth
- 2 tablespoons butter
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Chopped parsley for garnish
Instructions:
1. In a large saucepan, heat the chicken or vegetable broth over medium heat until hot. Keep it simmering while you prepare the other ingredients.
2. In a skillet, melt the butter over medium heat. Add the bread slices and cook until they are lightly toasted on both sides.
3. Remove the toasted bread from the skillet and place one slice into each serving bowl.
4. Carefully crack one egg onto each slice of bread in the bowls.
5. Carefully pour the hot broth over the bread and eggs in the bowls. The broth should cover the bread and partially submerge the eggs.
6. Cover the bowls with a lid or aluminum foil and let them sit for about 3-5 minutes, or until the eggs are poached to your desired doneness. The residual heat from the broth will cook the eggs.
7. Season with salt and pepper to taste.
8. Optional: Sprinkle-grated Parmesan cheese over the top of each bowl.
9. Garnish with chopped parsley.
10. Serve the Zuppa Pavese immediately while it's still hot.
