Ingredients:
- 8 thin slices of beef or veal
- 8 slices of prosciutto
- 8 slices of provolone cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup beef or vegetable broth
- 1 cup dry white wine
- 1 cup tomato sauce
Instructions:
1. Place the beef or veal slices on a clean work surface. Season each slice with salt and pepper.
2. Lay a slice of prosciutto and a slice of provolone cheese on top of each beef slice.
3. In a small bowl, mix together the grated Parmesan cheese, chopped parsley, and minced garlic. Sprinkle this mixture evenly over the prosciutto and provolone.
4. Starting from one end, roll up each slice tightly and secure it with toothpicks to hold the rolls together.
5. Heat the olive oil in a large skillet over medium-high heat. Add the involtini rolls and cook until browned on all sides, about 2-3 minutes per side.
6. Pour in the white wine and let it simmer for a minute to deglaze the pan. Then add the beef or vegetable broth and tomato sauce to the skillet. Bring the mixture to a simmer.
7. Reduce the heat to low, cover the skillet, and let the involtini simmer gently for about 30 minutes, or until the meat is tender and cooked through.
8. Once cooked, remove the involtini rolls from the skillet and transfer them to a serving platter. Remove the toothpicks.
9. Increase the heat to medium-high and simmer the sauce in the skillet until it thickens slightly, about 5 minutes.
10. Pour the sauce over the involtini and garnish with additional chopped parsley, if desired.
11. Serve the involtini hot, accompanied by your favorite side dishes like pasta, rice, or vegetables.
