Gelato


Ingredients:

- 2 cups whole milk

- 1 cup heavy cream

- 3/4 cup granulated sugar

- 4 large egg yolks

- 2 teaspoons vanilla extract

- Flavorings of your choice (e.g., cocoa powder, fruit puree, coffee extract, etc.)

Instructions:

1. In a saucepan, heat the milk and heavy cream over medium heat until it begins to simmer. Remove from heat and set aside.

2. In a separate mixing bowl, whisk together the sugar and egg yolks until well combined and slightly thickened.

3. Slowly pour the hot milk and cream mixture into the egg mixture while whisking continuously to prevent the eggs from scrambling.

4. Pour the combined mixture back into the saucepan and place it over low heat. Cook, stirring constantly with a wooden spoon, until the mixture thickens slightly and coats the back of the spoon. This should take about 5-8 minutes. Do not let it boil.

5. Remove the saucepan from heat and stir in the vanilla extract. At this point, you can also add your desired flavorings, such as cocoa powder or fruit puree, and mix well until fully incorporated.

6. Transfer the mixture to a bowl and let it cool to room temperature. Then cover the bowl with plastic wrap, making sure the plastic touches the surface of the mixture to prevent skin from forming. Refrigerate for at least 4 hours or overnight until thoroughly chilled.

7. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This typically takes about 20-30 minutes until the gelato reaches a soft and creamy consistency.

8. Transfer the churned gelato to an airtight container and freeze for an additional 2-4 hours, or until it reaches the desired firmness.

9. Serve the homemade gelato in bowls or cones, and enjoy!
