Pasta Carbonara

 Ingredients:

  • 8 ounces spaghetti
  • 4 ounces pancetta or bacon, diced
  • 1/2 cup grated Parmesan cheese
  • 3 large egg yolks
  • 1 large egg
  • 2 garlic cloves, minced
  • Salt and pepper
  • Chopped fresh parsley for garnish

Instructions:

  1. Cook the spaghetti according to the package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the spaghetti.

  2. While the spaghetti is cooking, heat a large skillet over medium heat. Add the pancetta or bacon and cook until it's crispy and browned, about 8 minutes. Using a slotted spoon, transfer the pancetta or bacon to a plate.

  3. In a medium bowl, whisk together the Parmesan cheese, egg yolks, egg, and garlic.

  4. Reduce the heat to low, then add the drained spaghetti to the skillet with the pancetta or bacon. Toss to combine.

  5. Remove the skillet from the heat, then pour the egg mixture over the spaghetti and toss quickly to combine. The heat from the spaghetti will cook the eggs, creating a creamy sauce.

  6. If the sauce seems too thick, add a splash or two of the reserved pasta cooking water to thin it out. Season with salt and pepper to taste.

  7. Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley if desired. Enjoy!
