Ingredients:
- 200g (7 oz) dark chocolate
- 200g (7 oz) unsalted butter
- 200g (7 oz) granulated sugar
- 4 large eggs
- 200g (7 oz) almond flour
- 1 teaspoon vanilla extract
- Powdered sugar, for dusting
Instructions:
1. Preheat your oven to 180°C (350°F). Grease and line a 9-inch round cake pan with parchment paper.
2. In a heatproof bowl, melt the dark chocolate and unsalted butter together. You can do this over a pan of simmering water or in short bursts in the microwave, stirring frequently until smooth. Set aside to cool slightly.
3. In a separate mixing bowl, whisk the eggs and granulated sugar together until well combined and slightly frothy.
4. Gradually add the melted chocolate and butter mixture to the egg and sugar mixture, stirring continuously.
5. Fold in the almond flour and vanilla extract until the batter is smooth and well combined.
6. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
7. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
8. Remove the cake from the oven and let it cool completely in the pan.
9. Once cooled, gently remove the cake from the pan and transfer it to a serving plate.
10. Dust the top of the Torta Caprese with powdered sugar, and you can also garnish it with some fresh berries if desired.
11. Slice and serve the Torta Caprese at room temperature.
