Struffoli


Ingredients:

- 2 cups all-purpose flour

- 3 large eggs

- 1/4 cup granulated sugar

- Zest of 1 lemon

- Zest of 1 orange

- 1/4 teaspoon salt

- 1/2 teaspoon vanilla extract

- Vegetable oil (for frying)

- Honey, for coating

- Candied cherries or sprinkles (optional, for decoration)

Instructions:

1. In a large mixing bowl, combine the flour, sugar, lemon zest, orange zest, and salt. Make a well in the center.

2. Crack the eggs into the well and add the vanilla extract. Gradually incorporate the flour into the eggs, mixing until a dough forms.

3. Transfer the dough to a floured surface and knead it for about 5 minutes until smooth and elastic. Shape the dough into a ball.

4. Divide the dough into small portions and roll each portion into a long, thin rope about 1/2 inch thick. Cut the ropes into small pieces, approximately 1/2 inch long.

5. In a deep pan or skillet, heat vegetable oil over medium heat. Once the oil is hot, carefully drop a few pieces of dough into the oil. Fry them until golden brown, turning them occasionally for even cooking. Remove the fried struffoli with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Repeat the frying process with the remaining dough.

6. In a separate saucepan, heat honey over low heat until warm and runny. Add the fried struffoli to the saucepan and gently toss them in the honey until coated.

7. Using a slotted spoon, transfer the coated struffoli to a serving platter or plate, shaping them into a mound or wreath-like shape.

8. If desired, decorate the struffoli with candied cherries or sprinkles while the honey is still sticky.

9. Allow the struffoli to cool and the honey to set before serving. They can be served at room temperature.
